Completo delle 32 tavole f.t. con oltre 300 disegni, eseguiti personalmente dal Vialardi, che conferiscono un'immediatezza didascalica sconosciuta nei manuali dell'epoca. Frontespizio incorniciato da vignette con immagini di vivande, arredi da tavola e cacciagione, il tutto stampato in oro. Edizione originale di questo noto ricettario in cui per la prima volta si utilizzano misure e pesi espressi con il sistema metrico decimale (p. 1). Il trattato fu particolarmente innovativo anche perché conteneva numerose ricette per bambini e promuoveva la conservazione dei cibi sottovuoto. Sono inoltre frequenti le ricette piemontesi, valdostane, nizzarde, genovesi e sarde, cioè di quelle aree che facevano parte del Regno di Sardegna. Il Vialardi si dimostra esigente nel raccomandare ingredienti freschi di prim'ordine, e abile nell'organizzare pranzi serviti alla francese o alla russa, completati dai vini più raffinati. Il presente lavoro fu composto dal Vialardi subuto dopo essere andato in pensione nel 1753 dopo trent'anni al servizio alla Corte Sabauda di Carlo Alberto e Vittorio Emanuele II.
